AI Unplugged for Middle School: Teaching Artificial Intelligence in Pre-College Engineering Education through Food Systems and Agriculture (Curriculum Exchange)

This paper presents unplugged curriculum modules designed to introduce foundational artificial intelligence (AI) concepts to middle school students (grades 6–8) without requiring prior coding or advanced technology. The modules use interactive, screen-free activities grounded in Challenge-Based Learning (Engage, Investigate, Act) to develop computational thinking, problem-solving, and an understanding of AI concepts such as prediction and optimization. Centered on real-world, socio-scientific issues, particularly in agriculture, food systems, sustainability, and manufacturing, the curriculum positions AI as a tool for addressing community-relevant challenges and fostering creativity and systems thinking. Designed for accessibility, including in resource-limited and rural contexts, the modules incorporate differentiated instruction and culturally responsive content. By integrating unplugged AI learning with Challenge-Based Learning, this approach offers an age-appropriate and scalable pathway for AI literacy that emphasizes human-centered applications over coding-focused instruction.
